A joke is you saying something or laughing at something that has truth to it or something you find pathetic but being passive aggressive about it.

For example a highschool bully would say “I’m just joking bro” after they diss you nah you’re just saying how you really feel negative or positive and not being honest by making it seem playful and fun.

So yeah it’s basically the truth or one’s true thoughts and emotions hidden behind playful remarks and politeness.

I thought it had to do with subverting expectations or some norm in a clever way. Like Larry from VeggieTales said “it’s funny because it’s unexpected”

In your example of “saying how you really feel” with a playful tone, it subverts the viewers expectations of what they think would happen.
A release of (your) emotions is usually associated with anger and sadness leaving people to expect a delivery that invokes those feelings. However, the playful tone violates that, making it unexpected and therefore funny (at least to you. I feel as if that kind of thing has been used too many times before to get a giggle out of me).
